PASSOVER JAM SHORTBREAD



Ingredients

2 cups of Solomon's Matzo Superfine Flour
1 cup sugar
125g margarine
1 egg
⅔ cups of jam softened/melted



Directions

Mix flour and sugar and rub together with margarine until combined then add lightly beaten egg. Knead until dough is formed. Take ¾ of the dough mixture. Press out flat on a shallow tray. Place jam in microwave to soften/melt and spread thinly over dough then crumble the remaining ¼ dough on top. Bake in a moderate oven approx. 170degrees C for 30min or until golden.
